A VAGUELY BOHEMIAN VITTLE FROM VAGUELYBOHEMIAN.COM
This recipe is great for home or travel, because the only required ingredients are super-basic.
So far as the toppings, you can
get wildly creative, or just pile on whatever you impulse-bought at the
farmer's market or whatever was left on the hostel's 'free food'
shelf.
This recipe can be savory or sweet.
Plus, you only need a mixing bowl and one pan, making for easy clean-up.
For
our stovetop pizza, use a basic flatbread crust. Just stir
together 2 cups whole grain flour, 1/3 cup oil, and 1/3 cup water. Add
in more water as needed, and knead until you have a cohesive, but not
at all sticky, dough.
Then, divide into 6-7 balls, and roll one out into a thin
circle. Place it on an unoiled skillet (cast-iron is best),
and cook until slightly browned, then turn over. While the
bottom is cooking, pile your toppings on so they get hot and yummy too.
If you're not serving a crowd, the dough will keep, refrigerated, for a few days. Or freeze and thaw as needed.
Sauce: Go with the traditional tomato, or try an olive tapanade, pesto, or simple olive oil.
Veggies: Chop up and, if you like, lightly saute fresh greens, broccoli, asparagus, and/or zucchini.
Protein:
Beans, peas, chickpeas, and seared tofu cubes all taste great, as well
as the traditional cheeses and cured meats. Depending on your other
toppings, anything (shrimp, whitefish, steak) can work.
Treats: More decadant foods like artichoke hearts, olives, roasted red peppers, mushrooms, and roasted garlic are nothing to scoff at.
Sweets:
Nutella and other nut spreads make a rich dish. Try nutella with
strawberries or a thin layer of cashew butter with pineapple. For
something
a little different, sprinkle the flatbread with goat feta, and drizzle
with honey; it's got the appeal of cheesecake while being almost
entirely healthy.
In Short: Use whatever you have at hand, or whatever foods you're craving, and let your creative side come to dinner.
